Curd Fritter – Ukrainian Syrniki

  • 500 g Cottage cheese
  • 2 eggs
  • 4 tbsp sugar
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • 4 tbsp flour plus some extra flour, for rolling
  • 5 tbsp sunflower oil
  • Confectioners’ sugar, for dusting
  • Sour cream, for serving


Step 1: Blend cottage cheese until soft, then add eggs, sugar, salt and 4 tbsp of flour and mix well.

Step 2: Before you start frying syrniks, leave it for the 30 minutes, so it gets the right consistency.

Step 3: Make middle size balls, dust them with flour, roll it into a ball, then press down to make a syrnik.

Step 4: Heat the oil in a large skillet over medium heat. Cook syrnik on each side until golden (2-4 min).

Step 5: Serve syrniki with sour cream, jam, honey, or maple syrup. And don’t forget to dust them with powdered sugar!
